The next great challenge for food scientists and technologists is to develop healthy foods that meet the life-style requirement of the 21st Century. Although the idea of living on pills may seem like science fiction, the reality is that more and more people are taking dietary supplements in pill form or trying to eat foods that have some particular health benefit. Life-style changes means people are coming to regard food as just another commodity to be purchased, on the move from outlets which are open 24-hours a day. They take less exercise, watch more TV or sit in front of a computer all day. Every year more of us become overweight, not just in North America and Western Europe but in developing countries as well. Obesity is the greatest challenge we face.
